15-Minute Chicken Burrito Bowl

Cook this tasty and filling meal in just 15 minutes! Perfect for those nights when you can’t bear to make anything that requires you to stand for even one episode of The Office. The grocery shopping is super simple and easy, plus you’ll have enough for leftovers tomorrow!

15-Minute Chicken Burrito Bowl

Makes 5 servings

Ingredients

  • 1.25 cups uncooked brown rice

  • 1/2 Tbsp. cooking oil of choice (I use EVOO)

  • 1 pound ground chicken

  • 1 packet (1.25 oz.) low sodium taco seasoning

  • 1 can low sodium black beans

  • 1 can no sodium corn kernels

  • 1 container (14 oz.) fresh refrigerated salsa

  • 1 bag (10 oz.) fresh spinach

  • Optional add-ins: shredded cheese, avocado, spicy Greek yogurt (mix with 1 chipotle pepper in adobo and a squeeze of lime)

Directions

  1. Cook brown rice according to package instructions.

  2. While rice is cooking, heat pan to medium heat. Add oil and chicken. Cook the chicken until fully cooked - should be slightly brown with no pink left.

  3. When chicken is cooked through, add taco seasoning packet and water according to package instructions. Start by adding half of the water it calls for, and add more as needed.

  4. Rinse corn and black beans.

  5. Assemble by layering brown rice, chicken, black beans, corn, brown rice, fresh salsa, and spinach into 5 bowls or meal prep containers evenly.
